Mulled Winter Fruits
This recipe
creates a lovely dessert for the holidays as either a lighter alternative to
Christmas pudding or as part of a buffet.

6 Dr Stuart's
Apple & Ginger tea bags
2 cups boiling
water
2 ounces (1/3
cup) raisins or sultanas
4 ounces (1/2
cup) dried apricots
4 ounces (1/2
cup) dried exotic fruits (pineapple, papaya, melon & mango)
6 cloves
2 star anise or
1 cinnamon stick
8 plums, halved
and pitted
2 ounces (1/4
cup) granulated (caster) sugar
2 oranges
Crème fraîche or
natural Greek-style yogurt
Place tea bags
into a heatproof bowl and add water. Add the raisins, apricots and exotic
fruits. Stir, then add cloves and star anise. Cover and allow to soak for
several hours or overnight to plump fruit.
Remove tea bags.
Pour soaked fruits and liquid into large saucepan. Add plums and sugar. Heat
and simmer gently until plums are tender, about 10 minutes. Cool slightly and
pour into serving bowl.
Using a sharp
knife, remove skin from the oranges. Cut into segments, removing membrane. Add
orange segments to bowl, stirring gently to mix. Serve while warm, accompanied
by crème fraîche or natural Greek-style yogurt.
Variation:
Substitute different types of dried fruits, such as dried plums or apple
slices.
